Directions
Elegant presentation. Juicy and rich cherry syrup, followed by creamy and crunchy filling. Topped with fresh and syrup-cherries again. Turned to be a total party hit indeed. Soo Tasty with Soo Foodies!
- Always keep the heavy cream in the refrigerator just before the beating
- You may replace meringues with your favorite cookies, for example
- Prepare the cherry syrup on the previous day and just assemble the dessert in front of the guests

Wash the fruits and squeeze some lemon juice. Take the cherry pits out. In heated saucepan, mix 100 g of the cherries with the sugar and the lemon juice. Leave for 5-10 minutes on the hot plate to caramelize. Add the coconut liqueur and the other 100 g cherries in the middle of the process. You will want to have soft, syrup-texture cherries as well as hard and fresher ones. Stir occasionally. Withdraw from the hot plate and leave it to cool down (you may also put in the fridge for 10 minutes). |

Take medium bowl and whisk the cold heavy cream with the vanilla until firm peaks are formed. Prepare decorative glasses and start with the arrangement. Put 2 table spoons of the cherry syrup at the bottom, then 2 table spoons of the beaten cream, crush 1-2 meringues and finish with a table spoon of cherry syrup again. Decorate with some fresh cherries and mint on top. |
