3 tbs Cocoa
2 tsp Baking powder
100 g dried Cranberries
100 g dried Plums
100 g Raisins
2 tbs Orange peel
3 tbs Orange juice
50 ml black Coffee
3 tbs Brown sugar
1 tsp extract Vanilla
200 g grated Pumpkin
150 g Walnuts
120 g dried Fruits mix
3 tbs Honey
4 tbs Cognac
2 tsp Spice mix

Without a doubt it is a guilty-free piece of heaven, full of natural sweetness and good fats, thanks to ingredients like dried fruits and nuts. Orange aroma, cocoa touch and a whiff of cognac in addition. Fruit & nut pudding – Soo Tasty with Soo Foodies!

  • Again, you can test whether your baking dish is ready with a stick in the middle of it. If it gets out dry, it is time to take the dish out
  • You can use dried fruits per your taste and/or additional aromas

Turn the oven on at 150 C. Use a baking dish with 18 cm diameter and cover its bottom with baking paper. Take a bowl and mix well the pistachio /whole nuts/, 2 types of almonds /chopped and fillet/, raisins, cranberries, plums /chopped/, cocoa, baking powder, the Spice mix and the orange peel. We used as Spice mix a combination of cinnamon, ginger, clove, coriander and nutmeg - 2 tsp in total.

One by one add also orange juice, coffee, vanilla, grated pumpkin, ground walnuts, brown sugar, honey and cognac. Stir well so all flavors and textures mingle homogeneously.

Place the mixture into the baking dish and bake for about 1 hour on 160 C. Take out and make the final touch – arrange with the 120 g dried fruits mix and some fillet almonds. Our choice of dried fruits mix - raisins, cranberries, chopped apricots, pineapple and plums.
