Wash, peel and cube the potatoes. In deep saucepan, pour 1 liter water with pinch of salt and let it boil. Add the potatoes in and reduce the heat to medium. Leave to simmer for about 20 minutes. Put the corn flour into baking pan and have it slightly burnt for 5 minutes in the oven to release its amazing aroma. Melt the butter and leave aside. |

Drain the boiled potatoes and press them tight. When mashed well, add the flour and 0.5 liter water. Put the potato-flour mix on the hot stove to burble, approximately for 20 minutes. Stir carefully with wooden spoon to prevent burning at the bottom. The dough is ready when you reach soft and smooth texture. |
