0.5 tsp Black pepper
0.5 tsp dry hot Red pepper

240 g red Beans
285 g sweet Corn

1 kg roasted Red peppers
1 bunch Parsley
100 g red Onions
180 g Avocado

Directions

Tasty little friends – beans, sweet corn, chickpeas, roasted red peppers, red onions and avocado. Mix the dressing and have salad Mexican way. Mexican style salad – Soo Tasty with Soo Foodies!

  • You can use ready canned vegetables. Or just boil them at home
  • For authentic flavor use fresh coriander instead of parsley
  • Idea for onions and avocado – serve a portion of the salad and then arrange with onions and avocado on top. In this way onions will remain crispy and avocado in one piece

Prepare the dressing by mixing fresh lime juice, olive oil, dry coriander, dry red hot pepper and black pepper.

Take out the vegetables from cans - wash and drain them. Wash and chop fresh vegetables. Use big bowl and start adding vegetables one by one – white beans, red beans, sweet corn, chickpeas, roasted red peppers and parsley.

Flavor with dressing and stir well. Add red onions and avocado and stir carefully. Left some avocado slices, decorate and serve.
