Directions

- Make sure all ingredients are with room temperature before the start
- If you want to double pitka size faster put it in the oven at 50 degrees for 20 minutes
- When the pitka is ready, in any case, put it on a parchment paper or wooden rack to avoid dampness at its bottom
- Finally, sprinkle with water and cover with cloth if you prefer it soft. Do not cover it if you prefer it crispy

Transfer to flat working surface and spread some flour on. Knead until soft but not sticky dough. When ready, add salt and knead again to absorb it well. Put the dough in bowl covered by cloth and wait until it doubles its size (approximately 50 minutes). Divide the dough in 3 small balls. Roll out the first one and spread some butter over. Shape it as a rectangular (approximately 35-40 cm wide) and then roll. Repeat with the second ball but this time before winding up, put the first one into the second and then start winding them up together. |

Put the big roll in oiled baking tray to form big circle. Cut it carefully to regular circled pieces, but not entirely so the bottom part of the roll stays intact. Slightly pull the cut parts to opposite directions. Take the 3rd dough ball and roll it out to 2 mm thickness. With glass make regular circles in the dough. Arrange the dough circles in groups of 4 and in a way that each subsequent is lying on the previous one. Carefully roll over and cut in two for two "roses". Grease with some butter. Form an inner circle with the "roses" in the tray. Knead and form little pastry ball for the center of pitka or put some extra roses in. |

Leave the dough aside at warm temperature for another 60 minutes until it doubles its size again. Whisk the 2 remaining yolks with 2 tbs milk and 2 tbs sunflower oil. Brush pitka with the mixture. This will give it nice golden color after baking. Spinkle with sesame and bake in preheated oven at 180 degrees for 25 minutes. |
