500 g Filo pastry
Directions
Traditional Bulgarian meal with filo pastry, eggs, yogurt and sirene. Real surprise hides within the layers – rich and tender rice. The result is another incredibly delicious banitsa! Vita banitsa with rice – Soo Tasty with Soo Foodies!

Take saucepan and pour water in. Heat to boiling point and put the rice inside. Reduce to simmer and cook until rice is ready. Flavor with a pinch of salt and 1 tbs oil. Withdraw from the hot plate and let it cool down. Add baking soda to the yogurt and stir. Leave it to risen for about 5 minutes. Take big bowl and put the eggs in. Whisk well. Add yogurt-soda mixture and whisk again. Add crumbled sirene too. Grease baking tin with 1 tbs oil. Take 2 sheets of the filo pastry and grease them. Spread 3 table spoons of the eggs-sirene filling, then add 3 table spoons of rice one. |

Roll carefully and place in the center of the baking tin. Continue wrapping the rest of filo sheets with both fillings. Gradually, the circle will grow bigger and fill the whole baking tin. Grease banitsa on top with a cooking brush for a nice, crispy, brown crust. Bake in preheat oven at 200 C for 30 minutes. |
